If just light surface rust, then use 80 grit. For paint removal, 120 to 180 works fine, and allows you to not sand off any body character lines. If you're not removing the paint, but only scuffing the surface (leaving the OE paint as a base), then 240 to 320 works great. Any priming (after any fillers) done should be final sanded with at least 240 grit, preferably 320 or 400 grit, to remove any coarser grits that you may have started with. Your final sand before top coating will be 600 grit, done wet. I realise this is overly simplified, but doing paint and body work is a labor intensive process that will take a lot of time AND patience, and shouldn't be rushed. Remember, the final finish is representative of the first layers of any work, and if the first part isn't done properly, then the final finish will suffer as a result. You might want to talk with your painter, and see how far he wants you to prep the finish before handing him the car to him for painting. I hope this helps.
