Of course you can replace the thermostat without pulling the engine, but if all you're doing is replacing the thermostat why bother with removing all the topside stuff. You can install the thermostat from below as you say and do the adjustment by just removing the "goggle" piece. If all the linkage parts are missing, then of course it will be necessary to remove all the other topside parts that you mentioned.
