If the gauge just has a single wire, then it uses the chassis as a ground return, so you would need to provide a ground wire. Water should not hurt anything here, because it should be made to survive driving in the rain. According to Berg, none of these sensors is very accurate. That's why it's important to do a little calibration on your own. The fact that your engine gets this hot this quickly (I hope I'm remembering the original post correctly) would seem to indicate that there's some kind of problem with your cooling. Make sure that you have ALL the cooling tin in place, and make sure that the oil pressure relief pistons are all free to move.
