When heads are reconditioned, material is often removed to smooth the cylinder seats, which raises compression. Usually the builder will compensate for this by adding shims.

I would say yes, you probably would do best to run the highest-octane fuel you can get at the pump, especially when the weather gets hot. Another obscure cost inherent to an older car.
