In this case the sending unit connector was occasionally rubbing on the underside of the air cleaner, completing the circuit.
It's worth a look...

Hmmm, the oil light should NEVER come on while driving at speed, but it is
fairly common for it to come on when the engine drops back to idle after
getting hot on the freeway.
