Well I can't speak for others, but I used to take my first VW to a garage, then I began to adjust things, repair things etc to save money. Then I found I couldn't rely on the garage to do a good job, and I learnt to do all the normal jobs, plus the occasional re-shaping, rust treatment, welding/fabrication etc ..... Well, if you're interested in finding out how to do all your maintenance and restoration, it can take a fair chunk of a lifetime, or you can learn it quicker at a college, but maybe not on a VW. There isn't one right way to do it, you do it how it suits you - no fun in it otherwise. Dave.
