I'd get a clip lead, 2 feet of small wire with an alligator clip at each end, and keep it in the car. If this happens again clip it across the fuel pump relay and make the pump run. It's possible that there is a problem with the sensor; I can never remember which one has which resistance, but others here seem to think that this is the one which should have a couple thousand Ohms resistance. (Measured by disconnecting the sensor from the harness and measuring from sensor lead to ground.) Try measuring on some other occasions and see if there's something inconsistent going on here.
