I've never seen one "bounce around". I suspect that your idle speed is moving 
up and down and you have guessed that it is the valve opening and closing. It 
is more likely that your idle speed is set too high, and you are seeing the 
very normal response to this.

Reduce your idle speed and I think your problem will go away.
