Body-off resto

Ok so I lied.  I've got one more question for Robert & Carolyn as well
as the list.  Well more like one more topic to cover.  Doing a body-off
resto and stripping down the pan to is bare assets seems like the
beginning of a never ending project or just a nightmare at least.  I'm I
just imagining it is worse than it is?  It seems to me that there would
be so much to replace on the pan!  Can you tell what all this intales? 
I know that's alot to ask.  Do most people hire a professional?  Does he
do all the work to where it's ready for the body?  Are there that many
competent people out there? Any good ones in So. Cal?
