  What colors/interior combinations were available for the VW
  Squarebacks years 68'-73'?
  Quite a few.  If no one responds I'll look it up in my parts manual.  Are you 
looking for anything specific?

  If you have a 1594cc engine in one, is it difficult to replace
  it with a 1775cc engine?
  No difficulty whatsoever.  But you can't use the stock FI and engine cooling 
can become an issue.  Make sure the tranny can handle any extra power the engine
puts out (if it's a good amount beyond stock).

  With the shortage of fenders, how are the fiberglass ones?
  I know that they are not stock, but what are the disadvantages
  of using them?
  Generally they take a good bodyman to properly fit to the vehicle as they are 
not made perfectly.  Some drilling of mounting holes and accessories will need 
to be done (like turn signals) and possibly some trimming/additional molding.
