Having blown an oil cooler seal this last spring, I can tell you that you CAN pull the cooler without pulling the engine, it's not real comfortable getting those tin screws in up front and back by the fan, taking them out is no problem, just need a good set of needle-nose vice grips.  If I had to do it again(God forbid!), I'd put the back end up on ramps, release the rear engine mount bolts and sag the engine down about 6 inches, just so I'd have room enough at the front to get those tin screws in.  Must have taken at least half an hour just for two screws(working alone).  Just make sure you briefly fire it up(or just turn it over to get pressure up) to check for leaks before putting the engine tin back all the way.  Hell of thing if you'd have a leak and have to do it again!  Can't advise on the thicker/thinner gasket, mine's a mixed bag, older cooler, newer case so I have to use the tapered ones.
