Visible rust first starts above the headlights and at the top of the front
fenders, slowly working its way down. The more important rust is meanwhile
working on the body at the front of the rear wheelwells and the rear of the
front wheelwells.

You would need ALL the parts, including the wiring harnesses, fuel pump, gas
tank and the extra return gas line. You would probably need to cut out the
place where the brain is mounted.
This is all probably possible, but quite a task for someone who is not
familiar with the FI to start with. If your car came with carbs, I would
leave it because it was probably set up pretty well by the factory to start
with.
