I just bought my 71 SB about two months ago. The body, paint and interior were all in good, not fantastic shape. It looks like I'm going to have to have a new valve job done on the car, but otherwise it was in fairly good shape. The owner was asking $3200 for the car, and I bargained her down to $2650. Depending on where you live you might be able to get more, but $2000 seems fair.....
Totally seems fair. Mine was in similar condition, except the interior I'd say was in excellent condition and the car wasn't running due to a fuel line leak in the engine compartment which I hadn't got to. Therefore I listed it as "not running, but if someone wanted to come fix the leak they could probably drive it away." I listed it at $2K with lots of pics on Ebay and it sold in one day. What you could do is list it as "sell at a fixed price" for 30 days and try $2300 or a bit more, and then you can choose to entertain offers. People send you offers via Ebay system and then you can accept or reject them. You can also select a low limit on offers you don't even want to be notified about.

I've sold quite a few cars on Ebay, both late model and my VWs and without a doubt, it offers the best visibility of any of the online car selling sites.

Good luck!
