Everything you've described sounds correct, except possibly that you should 
reuse all the old metal parts that were in there. Those parts need to go in 
correctly however, so make sure that they fit in the piston recess properly. 
Leaving them out won't give you extra pedal travel, but installing them 
incorrectly might.

The first time you pump the pedal should bring the pistons back into position, 
and this might take a couple of pumps. After that, things should be pretty  
much back to normal. If your disks are deeply grooved, however, the pads will 
have to wear to fit the disks before everything will be back to normal.

There is no need to bleed just because you replaced the pads, but normal DoT 3 
& 4 brake fluid absorbs water out of the air, so it is a good idea to flush 
fresh fluid thru the system every couple of years just to keep it dry.
