You're right to be worried about this. 3 threads is insufficient to hold. I 
wouldn't drive them this way, at all. I once worked on a stock squareback where 
one rear drum had been replaced with an aftermarket drum which had a thicker 
sidewall, which reduced the purchase that the wheel bolts got in the hub. The 
result was that, by the time I saw the car, 2 of the 4 bolts has stripped out.

I replaced the hub and the drum and 2 bolts and sent him on his way.

BTW, you also may need to make sure that drum brake bolts are not also too 
long. There are things in there that can get hit and damaged.
