When people want torque, they go for stroke.
Compression is also a source of 'free' power. Also,
people tend to stay with stock size pistons to keep
the cylinder cooling reasonable for street driven
cars.

I wouldn't think the stock FI would be able to handle
that. You might want to consider swapping out the
brain for a programmable unit you could adjust to your
needs and use the existing FI setup (injectors, pumps, etc).
