If the fluid spurts out with each pump then the MC is probably okay. I agree that it's odd that the MC came without plugs or caps, but if there were a problem there I'd expect you to see no spurting, or air bubbles coming out. You should also make sure you have the rear adjusters turned the right way. The slots are canted, so the bottom of the slot should face somewhat upwards. Make sure you aren't pumping brake fluid out under the gas pedal.
