The cheapos I've seen on ebay are just one simple extrusion glued into a loop. 
The real things are made of many specialized pieces.

I've usually replaced everything, too, but that has left me with a bunch of 
quite good pressure plates. The only bad pressure plate I've ever had was a Luk 
that was OE my 68. It was beautiful but the design was faulty and it didn't 
last. Unfortunately I had to take the engine out twice to convince myself that 
it was the problem. 

I bought a solid center clutch once also, then went back to the spring center. 
I believe the spring center gives smoother engagement, but I'm not sure about 
that.

If you're willing to try used parts, I have plenty of them, and some new parts 
also. I think next time I'll just use them. Most of the time when I take an 
engine out I replace the clutch disk, but even those seem to be virtually 
unworn. I'm pretty sure that in most cases, your old parts are fine, but you 
really have to know what to look for and that only comes from comparing new 
parts with old ones.

I don't buy complete wiresets, as you can't get the OE style dist cap 
connectors any more. I have plenty of parts, however, and I buy the wire in 
100' rolls. If you have the original ends, it is easy, and cheap, to replace 
just the wires. The wires are fine until the insulation gets hard or cracks, 
and the SP connectors are fine as long as they measure 1 kOhm.
