They have numbers stamped on them. Larger numbers mean larger diameter holes. 
You should be able to find the OE jettings posted somewhere.

I recommend that EVERYONE keep track of their gas mileage. Just keep a little 
notepad in your glove box and get used to a system where you write down the 
odometer mileage and fill-up gallons every time you fill up the tank. Then all 
you have to do is subtract this mileage from the previous one to get the number 
of miles since your last fill-up. Divide that number by the fill-up gallons and 
you have the gas mileage since your last fill-up.  

Each line in my notebook looks like this:  

date    mileage   (mileage difference)   gallons   (miles/gallon)  

where the numbers in parenthesis are calculated from the other values.  

Once you get in this habit you can watch your gas mileage for changing trends 
that might indicate problems. I'm often found this useful in pointing out a 
problem that I wasn't even aware of yet.

Someone else will have to answer this, as I'm not that familiar with the carbs, 
but I wouldn't expect the idle settings to have much effect at speed. If you're 
spending a lot of time at idle, this could be a problem, however. I think Steve 
mentioned syncronization, too. That's worth thinking about.
