I have seen the calipers ground on the interfering surface just enough to get like .040 clearance. I even picked up a whole disc brake conversion including those adapters, that had the calipers trimmed. That is the usual fix for that problem. Of course there will be those that will condemn that modification, but there are a lot of bugs, ghias, and T3s running that way. The big draw back is the increase in track width which gets your fender in close proximity to that turning and rotating tire.
