you could, but if you lose one half of the circuit, you will then lose all
your brake fluid, thus compromising the other half that should otherwise still
be functioning.  this assumes a fairly catastrophic failure, but the twin
reservoir also gives you a way of visually inspecting if you have a leak in
either of circuits, i.e. if you can see one side has less fluid in it, or is
dry.
