First, you don't check the level of the oil right after stopping the engine. You need to let the engine sit still for at least a few minutes. I *always* wait at least 5 minutes before I check the oil in any car. As for the stock oil light...it is used to let the driver know when oil pressure drops below a certain pressure; it has nothing to do with how much oil is in the engine. The sensor is located on the top of the oil cooler and it would appear that your [pressure] sensor is working correctly.
