I've never tried to get the mounting inside the roof off for the rvm, but if you just put your hand on the 'stem' of the mirror, and give a nice, hearty tug, the mirror will pop off in your hand. As far as the doors are concerned, take out the one screw holding the panel on, take off the window crank, and slowly and gently pop each of the clips off. The panel will then lift up and out from there.
