I keep a little spiral bound notebook in the glove compartment of each car. Every time I fill up I enter another line in the book. Each line is divided into 5 columns: date (optional), odometer reading, odometer difference, gallons, mi/gallon. All you have to do is to fill up the tank every time to about the same point, then write down the date, odo reading, and number of gallons. At some later time you can go back and subtract the previous odo reading to give the mileage covered, then divide this by the gallons put in (which is the amount of fuel used since the last fillup-which was the # of miles ago that you just calculated) then divide the miles by the amount of consumed fuel. Write the mi/gal down in the last column. The dates aren't necessary, but sometimes they can be helpful if you want to see how the mileage was when something "special" was happening, like the weather was very cold (or hot), or you were on a trip. For years I carried a slide rule in the glove compartment to do the mileage calculation, but even I don't use one any more.
