I really don't think you'll have to worry about the paint chipping -- it's pretty durable stuff nowadays. It's not like you're painting a garden hose! Heck, my Macco paint is still sticking to my stock beading :) Going for a contrasting look can work quite well if your interior matches. If your interior is a grey tweed or salt-n-pepper or white with black piping then the beading black would look very good. Flow is important. A colored interior, in my opinion, would not look good.
