The approach you are proposing is typical: pick the one system that 
seems the most mysterious, assume it must be the problem, and replace 
it.  Consider this, do you really know how carbs work?  When your 
mixture is all wrong and your engine is overheating will you know 
what to do?

The grass is always greener on the other side of the fence.  Chances 
are that either way you go will involve a very large learning process 
for you, but starting off with a switch to carbs will also start you 
off with a very large monetary outlay.

My suggestion, and others here will verify that I am biased in favor 
of the FI, is to go right out and buy a copy of the Bentley manual.  
Make sure you have the ignition and valves adjusted right.  See if 
you can find a mechanic who really remembers and knows the old Bosch 
D-Jetronic FI and try to talk with him about your problem.

In the meantime talk to us about your problem.  What exactly does 
your car do?  Does it start right back up?  Does it cut off instantly 
or just slowly fade away?  Keep in mind that the problem is probably 
simple, probably cheap, and probably something you can fix yourself 
in an afternoon.  The only hard part is figuring out EXACTLY what the 
problem is.

And buy this manual:
