As Tom says,  grab the stem from the front (front of car is front) and think of the base like it's a hinge and swing the mirror head twards the rear.

If the spring is good you'll hear a "POW"  and think that you busted the mirror off in your hand, but it will be OK.  The stem is not plastic.   It has a steel core inside.  

Reinstall the reverse direction.  Top in first, rotate down while holding the base still with the other hand.  (make sure fingers aren't in the way though.)

By the way this works on all types VW mirrors that do not have screws securing it.   Make sure first that there is not a round plug covering the mounting screw(s).
