  I'll make an attempt to answer your questions from what I have experienced
  in this Type 3 business.

  What year is this Fastback?   Has to be at least a 68' if it is FI'ed.

  This car sounds like it is going to take a lot of work to get it back to good
  condition.

  Heat exchangers are NLA, and used ones are very hard to find.  However
  mufflers are available from a variety of sources.

  What do the pans down under look like?  There are no replacements available
   you would probably have to buy a parts car to make a pan exchange.

  You should be able to find a rear seat at a swap meet, or from a parts
  car.

  You can find replacement fenders from time to time, the problem is not finding

  them; but finding someone who will crate them up for shipping. And shipping
  these is expensive! ($$$$)

  Converting to carbs shouldn't be that expensive, just a few 100 bucks or so.

  Please tell us what was living in there when you bought it.

  As always, it is important to buy the best car you can find for a project.
  This will be the most inexpensive route of all.
