Oooooh, I remember now! You're right, Jim, but it's not for water, it's for gassing. When you REALLY heat organic (read asbestos) pads, the binders start to gasify. This gas then forms a slick layer between your pad and the rotor, and braking goes away. The grooves are an attempt to get the gasses out from between the pad and rotor. I bet the pads without grooves are a different compound and don't have the same gassing problem that the older pads did.
