If you're just using nice straight wood panels then you won't have to worry 
about how the vinyl covering wraps around the back and catches water. Putting 
the plastic on the back of the panel should be fine, but I'd worry a bit about 
the possibility that the water would run down the plastic and then roll over to 
the bottom of the plywood. From there it could wick edgewise into the wood.

You might be able to get around this by leaving the plastic at the bottom just 
a mm longer than the panel. This wouldn't show, but would force the water to 
drip off there and not get to the wood. There is still some chance that the 
water could come around the sides and end up on the bottom edge of the plywood, 
so you had best keep an eye on it. Use exterior grade plywood, as this is glued 
with waterproof glue.

If it were mine, though, I'd not take any chances and glue the plastic to the 
door.

Either way, don't forget to clean out the water drain holes in each door bottom 
corner.
