Thanks everyone for the great tips and advise. I used two different thermometers (candy and meat) to check the water temp and discovered that the gauge is actually dead on. After pouring the boiling water into the insulated cup and immediately inserting the thermometers the temp on both hit 200F exactly, which is the same reading I got off the gauge in all three tests. So I can rule out a malfunctioning gauge! Now back to the drawing board...
