It's along the same lines as the smell that old vacuum tube audio equipment gives off, as it is heating decades of accumulated daily reside. The VW smell is unique [I think], but quite enjoyable all the same. Perhaps placing a bag with some stale baked goods [like cinnamon raisin bagels or some other pleasant smelling thing] behind the seats where it will get hit with heat will counter the smell of rodentia as it washes out.
