I've built a lot of FI engines with ported heads and stock displacement. More recently I have reduced the compression ratio in them because of the reduced octane of modern gas. They run really well and have always given me satisfaction in performance, longevity and durability. Others here have reported that they have done small (<10%) increases in displacement with success, but that larger increases don't seem to work well. There seems to be universal agreement that fiddling with the pressure sensor is a sure way to nowhere. The problem is that once you break the factory seal, you will lose your place (Yes, I know that you plan to keep track of your adjustments, but at some point you will lose track of it) and then you will never be able to put the PS adjustment back where it belongs. I recommend that if you increase the displacement, you should increase the fuel pressure by the same amount.
