Be sure you have the right seals for the cooler. There are 3 different
seals, and combinations of coolers and cases. 
I think Jim Adney has an FAQ on the proper seals. 
The differences is that the case can have 8mm passages, or 10mm
passages. The cooler can also have 8mm or 10mm passages. Which seals you
use depends on which combination you have.
As for the thermostat, you should have one no matter if you are in the
Sahara, or Siberia. It is vital that the engine reaches proper
temperatures as quickly as possible, as a too cold engine promotes
engine wear.
