He should be able to help you with a headliner. He's a Variant fanatic 
and knows all about what's original for an N model. He also used to 
have some original cloth upholstery material for mid-60s Type 3s, but 
it may be long gone by now. The other alternative would be to try to 
find something close -- I think if you look in Hemmings Motor News 
you'll find sources for auto upholstery fabrics for older American 
cars, and I'm sure there's something available that's reasonably close 
to the VW striped fabric. No one's going to have exactly what you're 
looking for -- they'll probably laugh if you say it's for a VW -- so 
you'll just have to see what's out there that works. The vinyl part 
shouldn't present a problem.

You could also consider your car's other upholstery option, which would 
have been "grey mesh" vinyl (aka "salt and pepper") instead of fabric 
on the seating surfaces, and off-white vinyl for the rest. The mesh 
pattern vinyl was also used on Type 2s and is now being reproduced. TMI 
carries it and there's a swatch of the material on their website if you 
go to "color swatches" and then to "vintage series" and download the 
pdf.  (If you order seat covers from TMI make sure you specify which 
style seat back you have. Their catalog shows the 1966-and-later style 
as correct for 1965, but most if not all '65s have the earlier style 
seats.)
