There is a little "flywheel lock" tool that attaches to one of the upper engine mounting holes and grabs the flywheel and holds it in place. Most VW parts houses stock/sell the tool. Alternatively, you can get a long piece of angle iron and drill two holes to match two of the clutch mounting bolt holes. Bolt it to the flywheel, and you have a nice long lever to use against the fan nut wrench.
