It's a LOT more complicated than it appears at first glance and you'll never 
get it back together right if you take it apart ahead of time. You will also 
probably rip out some perfectly good wires that will not come with your new 
harness.  

NOS exact match harnesses are not available. Unless you pay big bucks for a 
custom exact match you will get a rather generic harness, which will not be a 
clear improvement over the old one.

The OE points and coil work really well, but an electronic setup will reduce 
maintenance, usually. In general, my advise would still be to leave it alone 
and concentrate on things that actually need to be fixed.

Here are some important trouble areas:

Front brake calipers (rebuild)
master cylinder (rebuild)
rear wheel cylinders (rebuild)
debris in cooling airbox (under dash)
Grease the front axle
check the sway bar fixing bolt on the LHS
oil the door hinges
rusty pedal cluster
loose engine fan housing
plus the usual tune-up things: dwell, timing, advance mechanisms, valve lash, 
....
