I think of it as two separate problems, none of which involve jacking your car up sky-high: 1) liberate the engine from the car and set it (the engine) on the ground; and 2) do what you need to do to get the engine out from there (if applicable) I maybe jack up the car a little bit to get to what I need to reach for disconnecting and so on. Then, with the car on really low jackstands at the rear, I liberate the engine. I take the jack (or log cabin of 2x4s, or whatever I'm using) and get the engine lowered down-down-down. Get the jack out from under it. Let the engine rest on the earth. I've replaced clutches like this on a Squareback -- may have even left the engine on the jack. If you don't mind reaching around, you could certainly remove the heads with the engine right there. Maybe get the car up a wee bit higher on jack stands. Or, do what you need to do to slide the engine out. The Type III engine is squatter than a bug or bus engine... you can likely put the rear of the car on the ground, maybe jack up one side and remove a rear tire... whatever it takes to scoot the engine out.
