The other thing that is affected by change of throttle position in a 71 twin carb is the ignition timing, as it has the dual vacuum distributor and an idle timing of TDC with hoses attached (I assume it's the same spec as we got in the UK). Check the mixture and the timing as a start. How recently have you adjusted and balanced the carbs? Dave.
