I might recommend that you disable the chokes and park them in full-open position until you've got any other bugs worked out. The automatic choke is a nice feature when it's working right, but not necessary to operation (as I confirmed in Michigan last New Year). => about adjusting the accelerator pump settings. This matters: too rich on the pump and you'll bog every time on acceleration. The stock setting is the center hole. My rejetted carbs and big-valve heads run best with the pumps set on the inner hole, which was counterintuitive to me, but there you are.
