The oil takes a second to fill up the passages, pressurize, and turn the light off. Another thing to check if your oil light is on is the oil pressure relief valve and spring. Make sure the relief valve(s) move freely and the spring(s) are of the correct length. My '67 has a late model style dual-relief case and the forward pressure relief valve got stuck in the downward position one day, the oil light started coming on after a highway cruise. It was a bit easier for me to diagnose because the oil light have never come on beforehand so I knew something was wrong. It's also possible the oil pressure sender is worn out, although I personally have only seen ones that either worked or did not work.
