Heather, on my Notch I removed all of the undercoating (was changing the color of the car ), it came off very easily and I just primed and repainted it. I put on several coats of clear to help protect the inner fenders from stone chips. It's kinda nice being able to wipe off the dirt when you wash the car , it also allows one to keep an eye out for rust. If you want to re- undercoat it, I would use the 3M stuff, or if you're repainting the car you could use the chip guard stuff that is used on newer cars ( the lower edge ). I hope this helps you out.
