You can certainly do this, and it's easier than dropping the engine. 
The hard part is removing the cooling tin screws which will be 
rusted in place; use a torch to free these.

Otherwise you should remove the generator, dist, left side air 
runners and injectors.

The 71 cooler uses the thin flanged seals with no spacers on the 
studs. If your engine is not the original, or is made of mixed parts 
you may need a different arrangement. If you are not certain which 
arrangement you have write back and I can send you a file that 
explains the possibilities and how to treat each of them.
