Many people have, but it is seldom the quick simple fix that most people hope for. Both the FI and carbs have their own learning curves. A new set of carbs is unlikely to come set up properly for your engine and you are likely to spend months trying to figure out which jets you need and where to buy them. The FI may seem mysterious, but there are lots of resources available, especially here, on how to make it work reliably. As long as you engine is stock displacement, or close, you won't find any system that works better or more reliably than your FI. If you are willing to do your own work, you'll find that keeping your FI working well is MUCH less expensive than replacing the system. Once you start changing things you will find that you are pretty much on your own as far as questions like what distributor should I be using, etc. This is NOT because there's no one out there willing to help, it's just not likely that you'll find someone willing who ALSO has exactly your combination of other parts and who has also sorted out all his problems.
