Yes, veg oil oxidizes into a hard goo, but many rubber compounds react adversely to petroleum products. I would avoid both on the window seals. Things to avoid for storage are heat and ozone. Most anything you put on it for protection are likely to be cosmetic only, but a good silicone spray might be good protection.
