Just saw something on that last night. On page 136 of the book by Bill Fisher "How to Hot Rod Volkswagen Engines" they talk about converting flat to upright. In a nut-shell, it can be done but there is more work than you might expect. It can also be a bit expensive unless you have a lot of spare parts sitting around. It's only a one page breakdown but it might be worth a look.
