I'm doing this right now.

The 12V chokes are a one-year-only item. I managed to find a pair, but 
it took luck. Nobody wants to sell them without the carbs. I'm planning 
to use manual cutoffs rather than the (expensive) electric ones.

I got a 12V generator from Kymco that's the same diameter as the 6V, so 
I won't have to change my fan shroud. I switched to a 12V flywheel and 
starter, with a starter adapter bushing.

=> uh, what else?

Don't forget the wiper motor and horn.

=> Oh, I do have a working 6v selfwinding clock

I'm putting in a stepdown just for this. I'd like to hear anyone's 
specific experience with them. I've seen them for anywhere from eight 
bucks up to over 50, so I take it they vary in quality somewhat.

=> Would it be wise to have an auto-electrical shop do this work?

There's really not much to do but replace parts. The 6V harness 
has greater capacity than the 12V, so the actual wiring isn't a problem. 
Of course the harness is also 30 years old, which is why I'm replacing 
mine.
