I use a cylinder head temperature gauge that sits under the spark plug on number 3. These gauges aren't that accurate but I base the current reading on past experience with that engine to decide if it is running hot or cold. These gagues give the quickest reaction to pedal depression on the freeway. I have a oil tempeartue sensor that sits on top of the oil cooler on one of my cars.
