I do this on every engine I rebuild. VW should have done it. It lets 
you see what's happening up top, and also lets you stick a 
screwdriver in there to see if everything is free to wiggle, as 
opposed to seized up.

You can see what the thermostat bellows is doing by just looking 
under the car when it's warm. You may need a flashlight. You can test 
the thermostat in hot water on a stove, but leave it in the little 
bracket that holds it. This keeps it from over-expanding and 
destroying itself.

When you put everything back together in the engine, remove the 
thermostat fixing bolt and adjust the bell crank so that the flaps 
are horizontal when the top of the thermostat is resting against the 
top of its bracket, pulled up by the spring. Once adjusted, install 
the fixing bolt, pulling the thermostat down and the flaps closed.
