 Temp was stable at 180-190F around town. Then I got on the freeway
(65mph/75 degrees outside temp) and within
5-6 miles the oil temp was up around 230F+ so once again I had to pull
off to cool it down.

Plug reading can be tricky.  To get a reliable one you should get the
engine up to your normal operating temp then turn off the engine, safely
coast to a stop, then read the plugs.  If you cruise back home and allow
your engine to cool and idle the readings will only tell you how your
engine runs at low loads and speeds.
